Carrot Cake Protein Waffles
OK sooo if you’ve seen my other carrot recipes (no bake carrot cake and carrot cake bliss balls), you know I’m a HUGE carrot cake fan. These carrot cake protein waffles had to be made, because who doesn’t want cake for breakfast?! These are so amazing, so let’s hop right in!
Carrot Cake Protein Waffles Broken Down!
As you may know, typical waffles can be very carb heavy. These waffles are high in protein, healthy fat and fiber – three of my favorite things! I also snuck in a good amount of fiber and veggies as well with the carrots of course! Let’s break it down..
- Protein: For the protein in these waffles, I used (3) egg whites and (1) egg. I always love to go with organic eggs and would recommend to go that route as well.
- Healthy Fats + Fiber: Of course I had to add these in as well to ensure we’re getting all of the important macronutrients in these waffles. I chose to use chia seeds, flaxseeds and acacia fiber. Chia seeds area great source of healthy fat and very high in Omega-3s, as well as high fiber. Flaxseeds are a great source of fats, fiber and protein as well.
- Sweetener: I used a combination of cinnamon, as well as monk fruit sweetener.
- Veggies: I always love to sneak in veggies, and for this recipe we did 1/4 c carrots – of course for the carrot cake!
As I mention below, you could easily make these into pancakes as well if you don’t have a waffle iron. I also love to top the waffles with pineapple, an amazing nut butter and some monk fruit maple syrup.

Ingredients
- 3 egg whites
- 1 egg
- 1/4 c carrots
- 2 tbsp chia seeds
- 2 tbsp flaxseed meal
- 1 tbsp monk fruit sweetener
- 1 tbsp coconut flour
- 1/2 tbsp cinnamon
- 1/2 tsp pure vanilla extract
- 1/4 tsp baking powder
Instructions
Carrot Cake Time!
- Blend all waffle ingredients together until well combined.
- Grease waffle maker (or skillet) with coconut or avocado oil.
- Pour in batter and cook until golden brown.
- Top with monk fruit maple syrup and pineapple (optional)
Notes
*If you don't have a waffle maker, feel free to make these as pancakes instead!
